In 2007, Ichiro Akuto the grandson of the founder of the Hanyu distillery, built the Chichibu Distillery. Situated in Saitama prefecture around 100km north west of Tokyo, production began in Feb 2008. There is a small mill, a mash tun, washbacks made with Japanese Oak (Mizunara), and a pair of small copper pot stills manufactured by Forsyths of Rothes, Scotland. Casks are matured in traditional dunnage-style warehouses and several different casks types including barrels, sherry butts and hogsheads are used. Enhanced by the environments of Chichibu, the whiskies are non-chill filtered and non-coloured.
